Mashed Sweet Potato with Garlicky Kale

The combination of sweet and savoury in this recipe is perfection. These mashed sweet potatoes exceed any and all expectations as the perfect side dish with their combination of sweet and savoury flavours. They are also incredibly easy to make, perfect for a weeknight.

I mash them with cashew milk, however I have also mashed them with coconut milk and almond milk, and all turned out rich, creamy and equally healthy. This side dish is great for your health as kale and sweet potatoes are both known to aid in digestion due to their high-fiber content, not to mention they offer a plethora of B vitamins, vitamin C, and vitamin A.

Ingredients

1 cup kale

2 cloves garlic

1 tbsp olive oil

1 large sweet potato

5 tbsp nut milk 

1 tsp salt

 

Bring a large pot of water to a boil. 

Peel the sweet potatoes, chop them into 1-inch cubes, and add them to hot water. It doesn't matter if the water is boiling when you add them. Boil the sweet potato cubes for 10-15 minutes or until a fork can be poked through with minimum/no resistance.

While the sweet potatoes are boiling, crush 2 cloves of garlic and chop your kale. Heat olive oil in a small pan over medium heat and add both the garlic and kale. Stir until kale has turned bright green and has wilted, about 2 minutes. Take the garlicky kale off the heat and set aside.

Once sweet potatoes are cooked through, drain and mash until smooth. Add nut milk while mashing. Afterwards, mix in salt and garlicky kale. Enjoy!
