Zero Waste Green Juice

I love saving my vegetable scraps for a green juice at the end of the week! You can save your broccoli stalks, celery leaves, cauliflower greens, parsley stalks, kale stalks, chard stalks, and the list goes on. These ‘scraps’ turn out not to be scraps at all. Commonly the parts of vegetables we toss are full of nutrients, and if you don’t want to eat them, may as well juice them!

Ingredients:

1 lemon

2 kiwi fruits

2 celery stalks

1 bunch kale stalks (save the leaves for something else)

1/2 english or field cucumber

1 inch ginger

1 apple

1 bunch italian parsley stalks (save the leaves for something else)

Wash all the fruits and veggies. Remove the leaves from the kale and the parsley, we are going to juice the stalks and save the good leafy bits.

Before you peel the lemon, to make this juice truly zero-waste, you will want to zest it and save the zest. Lemon zest can be stored in the freezer in an airtight container. Now that you’ve zested th lemon, you can peel it.

Chop up all the fruits and veggies so they fit in your juicer and start juicing!
