No-Bake Pumpkin Spice Bliss Balls

I've newly become obsessed with bliss balls, and I've always been obsessed with pumpkin spice, so it only makes sense that I combine the 2 into one delicious & nutritious creation. The high amount of natural sugars present in these make them perfect for an afternoon pick-me-up, and I used quinoa flakes instead of oats so these balls contain COMPLETE protein which will keep you full for longer! You should be able to find quinoa flakes at your regular health food store in the same section as the oats, rye flakes, and wheat flakes.

Blend the dates in your food processor until a date ball forms, use a wooden spoon to break it up and add the rest of the ingredients. Blend everything together for another 20-30 seconds, scraping the sides, until the ingredients are combined. I've added my pumpkin pie spice recipe at the bottom of this post so if you have the proper spices lying around I suggest making your own spice rather than buying the pre-mixed version.

Spread your walnut crumbs on a small plate and set aside. Take 1-1.5 tbsp of the date mixture and roll it into a ball. You can make the balls however big you want them to be. Sometimes I feel like making tiny, cute ones and other times I want hefty ones that need to be eaten in 2 or more bites. Once you've formed it into a ball, roll the ball in the walnut crumbs so it is coated. Repeat this process until all the date mixture is used up.

Ingredients:

1 tbsp pumpkin pie spice

3/4 cup quinoa flakes

1 cup dates

1/2 cup pumpkin

1 tsp maple syrup

3/4 cup walnuts

1/2 cup pumpkin seeds

1/4 cup ground walnuts

 

Blend dates in food processor until a date ball forms. Use a wooden spoon to break this apart and add all remaining ingredients EXCEPT the walnut crumbs. Pulse for another 20-30 seconds until combined, being sure to scrape the sides. 

Spread the walnut crumbs on a small plate and form 1- 1.5 tbsp of the date mixture into a ball. Roll the ball in the walnut crumbs until coated and set aside. Repeat until all the date mixture has been used up, enjoy!

1/2 tsp allspice

1 tsp ginger
