Vegan & Gluten Free Chocolate & Pecan Energy Bites
Hi guys! This snack is incredibly versatile, healthy, and SO yummy. All you need is a food processor to put them together, and you don't even need to bake them!
First, process the dates until a date ball forms, and I find that if you break it up with a wooden spoon before adding the other ingredients it combines better.
Transfer the combined dates, vegan chocolate, pecans, oats, and maple syrup to a bowl and prepare a plate with a layer of shredded unsweetened coconut.
Take about a tablespoon of the date mixture and roll it in your hands, and then roll it in the coconut. Place the finished product on a plate or a baking sheet and refrigerate!

Ingredients:
1 cup pecans
1/2 cup oatmeal
1 cup dates
1/2 cup vegan chocolate, roughly chopped
1/2 cup shredded coconut
1 tbsp maple syrup
Blend dates in a food processor until a date ball forms. Add the oatmeal, pecans, chocolate, and maple syrup and blend until combined.
Transfer the mixture to a bowl and spread the coconut on a small plate.
Take about a tablespoon of the date mixture and roll it into a ball. Roll the ball in the coconut and put in a container or on a plate or in your mouth! Enjoy!
