Coconut Blueberry Overnight Oats
These desert-like oats offer the perfect make-ahead breakfast for busy mornings. They are packed with healthy fats from coconut milk, antioxidants from blueberries, and the fiber in the oats will keep you full until lunch! I topped them with some crushed almonds and added blueberries for an added boost (and to make them look pretty). Enjoy!

Ingredients
1 ripe banana
1/2 cup coconut milk
1/4 cup water
1/3 cup blueberries
1/3 cup oats
1 tsp maple syrup
1 tsp vanilla extract
1 tbsp chia seeds
Directions:
Put the banana in your jar or bowl and mash. Next add the coconut milk, water and maple syrup and stir until combined. Lastly, put the oats and chia in the jar and stir until combined. Cover with a lid or plastic wrap and chill in the fridge until morning!
