Assorted Avocado Toasts
I could eat avocado toast every single day and never get sick of it. It is so versatile, quick and let's not forget it's most important quality - healthy! Avocado is full of healthy fats that are necessary for weight management and healthy brain function.
The Cucumber, Pea Shoot & Hemp toast is totally refreshing and 100% vegan, whereas the Tomato, Feta & Balsamic toast is rich and flavourful. The two kinds of toast complement each other fabulously.
*serves 1
Cucumber, Pea Shoot & Hemp Toast:
1 slice multigrain bread
1/2 avocado, mashed
1/4 cucumber, sliced
handful of pea shoots
1 tbsp hemp hearts
dash of salt & pepper
Tomato, Balsamic & Feta Toast:
1 slice multigrain bread
1/2 avocado, mashed
4-5 grape tomatoes
1 tbsp feta cheese, crumbled
1 tsp balsamic vinagar
dash of salt & pepper
Toast your multigrain bread and spread mashed avocado on each slice.
Sprinkle some salt and pepper on the avocado, and arrange your toppings on top.
Cucumber, Pea Shoot & Hemp Toast:
Sprinkle some of the hemp hearts on the avocado before you put the cucumber and pea shoots on, and some afterwards.
Tomato, Feta & Balsamic Toast:
Drizzle the balsamic on the tomato toast after you have placed the tomatoes and crumbled the feta on top.
