Strawberry Pitaya Smoothie Bowl

Dragon Fruit, we’ve all seen it in the shop but how many of us have actually tried it? When I tasted it for the first time, I thought it was pretty average - nothing to get excited about. Upon further research, however, I realized how above average this fruit truly is.

Pitaya, also known as dragon fruit and pitahaya, is loaded with that wonderful prebiotic fibre I keep raving about. Remember, the good bacteria in your gut thrive upon this prebiotic fibre and will end up outcompeting the bad bacteria. It also has lots of vitamins and minerals, including vitamin C which is a great immune booster.

It isn’t overly flavourful or very sweet, it is packed with antioxidants, nutrients, and that lovely prebiotic fibre, making it a great smoothie supplement. So next time you see pitaya at the grocery store I highly recommend scooping one up and trying it out!

Ingredients:

1/4 of a pitaya (aka pitahaya, dragon fruit)

1 cup frozen strawberries

1/3 cup plain greek yogurt (or coconut yogurt if plant based)

1 tsp raw honey (or maple syrup if plant based)

2 tbsp coconut milk

2 tbsp protein powder of choice (optional)

Toppings:

Chia, hemp hearts, shredded coconut, fresh fruit, toasted nuts, edible flowers, etc.

Add all smoothie bowl ingredients in a food processor and pulse until smooth. The smoothie should be quite thick.

Put the smoothie in a bowl and top with whatever you fancy. In the photo I used fresh dragon fruit, shredded coconut, chia seeds and a flower (not edible, don’t worry I didn’t eat it!).
